Short Bread

As I type, I’m listening to Kas from Wren&Whippet and Cam from Faces of the Frontier chat live on Instagram. It’s just a casual get together talking all things life in isolation, valuing yourself and your business through this tricky time and how to stay connected with your people. Kas is currently trying to convince Cam to sing but Cam isn’t budging! I love Kas’ selfless approach - she’s currently going live on Instagram every weeknight at 8.30pm to read poetry or sing to her audience, all just to give us a moment of distraction while keeping us connected. Cam is another one who is constantly reaching out, offering her tips and tricks in business to help us get through isolation and shares the best coffee stories on Instagram everyday. I’m secretly there for the coffee!

All of these little gestures from our virtual friends have helped many of us at this very challenging and uncertain time. So as part of our mission to also stay connected with our people, we thought there would be no better way than doing that through sharing recipes. Food brings people together and after running a few polls on our Instagram stories yesterday, it’s obvious that our followers feel the same too. So here is our next recipe instalment!

The humble short bread. Short bread for many of us, connects us to our past and it often takes us back to fond, warm memories of baking with our mothers or grandmothers.


Ingredients

200g unsalted butter, softened

½ teaspoon baking powder

1 2/3 cup plain flour

¼ cup rice flour

½ cup caster sugar

1 good teaspoon pure vanilla


Method

Sift both flours and baking powder in a small mixing bowl. In an electric mixer, beat butter, sugar and vanilla until creamy and pale (about 5 minutes). Stir in the flour and use your hands to bring the mixture together. Turn onto a lightly floured surface and knead gently until smooth. Place the dough onto a baking tray lined with baking paper and roll until approximately 25cm x 20cm rectangle and about 1cm thick. Mark out even squares and then prick all over with a fork.

Bake for 20 – 25 minutes. Once cooled slightly, cut through the marks.
