Recipe Share - Cinnamon Teacake

Being back in a COVID mess with lockdowns and fear everywhere, we’ve been feeling a bit hopeless. Usually we can open up our cottage to our lovely guests and provide them with a place to stay to make them feel relaxed and recharged but right now, we can’t do that for so many. We have been thinking about how we can give back to our audience that might add a small moment of joy at this very difficult time. We’re thinking recipes, podcast lists, styling and brand tips and recommendations, and some beautiful places we have found on road trips around regional NSW. We all love creating a good bucket list and so many of you are going to need something to look forward to when things start to return to ‘normal’. I hope by connecting with you all in this capacity, it allows you a little bit of headspace away from all the chaos. We’d love to hear from you also if you have a recipe you think we should try.

We’re going to kick off with our cinnamon teacake that we put together when we took over The Grampians Goods Co Instagram a couple of weeks ago. It’s the perfect picnic basket cake so anyone in lock down, how about a backyard picnic? This lovely little cake takes less than 20 minutes to prepare and half an hour to bake and you are good to go. The smell is like a big, warm cinnamon doughnut! This recipe is from one of my favourite and very old recipe books – Sweet Old Fashioned Favourites by The Australian Women’s Weekly.

Ingredients

60g butter

1 teaspoon vanilla essence

2/3 cup castor sugar

1 egg

1 cup self-raising flour

1/3 cup full cream milk

10g extra butter melted

1 teaspoon ground cinnamon

1 tablespoon extra castor sugar

Method

Heat the oven to 180 degrees. Grease a 20cm round cake tin and line the base with baking paper.

Beat butter, sugar, vanilla essence and egg in a small bowl with an electric miser until light and fluffy. Stir in the sifted flour and milk and stir gently until smooth. Spread mixture into the prepared cake tin and bake in the over for about 30 minutes. Turn onto a wire rack and brush with extra butter and sprinkle with combined cinnamon and extra sugar while hot. Serve with butter or just on it’s own with a cup of tea.

But if you aren’t up for a picnic, why not just create a space at home where you feel cozy and removed from the world. Light the fire, grab your favourite blanket, pour a cup of tea and slice that cake. Light a candle, put on your favourite play list and block some time just for you. Stay safe everyone.
